A tantalising 5-course tasting menu entirely focused on Non-Native invasive ingredients, such as Grey Squirrel, Muntjac Venison and Rabbit. Nina has specially selected ingredients that are frequently seen as being harmful to our environment and responsible for reducing the habitats and populations of our native species.
This menu is designed to challenge perceptions around these controversial ingredients, by using them rather than wasting them and at the same time raise awareness and play a small part in helping to reduce their impact on our environment.

'Boost Your Immune System' A tantalising 5-course tasting menu with a focus on Fermented Foods. Fermented foods have been consumed around the world for thousands of years. From more familiar foods such as cheese, yoghurt and sourdough bread to more specialised ingredients such as kimchi and miso from Asia, sauerkraut and creme fraiche from Europe, shanklish and doogh from the Middle East, poi and atole agrio from the Americas, and garri and togwa from Africa to name a few. A carefully crafted menu, distinctly different, focusing on an aspect of cooking that Nina holds dear.

Enjoy a 3-night break from 31st December 2024 with a 7-Course New Year’s Eve Tasting Menu
Breaks start from £759 (from the 31st December to 3rd January), accommodating two adults in a Classic Room for three nights, breakfast included each day, along with our 7-Course Tasting Menu served New Year's Eve.
Our New Year Celebration Tasting Menu, thoughtfully curated by our Head Chef Nina Matsunaga, showcases the finest seasonal British produce with a fusion of Japanese, German, and modern European culinary influences.
