At the heart of Nina Matsunaga’s cooking is seasonal British produce, influenced by her own Japanese heritage, and German upbringing. She studied a master’s in food policy, where she focused on the sustainability of food, another influence throughout the Black Bull. This inspires her own, truly unique dining experience, whether that’s just for a snack in the bar, or her tasting menu in Tsuchi. Nina sources her produce mainly from the ‘Neck’ of Britain, an area that includes the best of Cumbria, Yorkshire, Lancashire & Northumbria. Some of greatest the UK has to offer.
Our meat is picked directly from the farm, the whole beast to guarantee the best quality reaches the plate. Most of our fish from two fantastic coasts either side of us, fruit and veg from the lush fields of Lancashire & Yorkshire as well as many other products surrounding us. You’ll also hear a call for the wild, using seasonal game, and foraged produce, often collected by the team.
